Being a type 1 diabetic, food choices are a constant part of my daily life. While I don't profess to be a staunch "rule follower" when it comes to my diabetic diet.... I do always strive for balance.

Green Smoothies!
This is a relatively new addition to my morning routine. Who knew Kale would be so delicious? Or easy to hide behind a juicy mango;)
This recipe was passed on to me from a dear friend and colleague Deb (@debshackell )
Here’s a guideline:
1 banana
1 large handful of spinach (or kale)
1 thumbnail size piece of ginger (I grate it, skin and all!)
1/2 cup coconut water (this is my own adaption to Deb's original recipe)
Approx. 2/3 cup of frozen mango
Optional – squeeze the juice of one orange or clementine…or throw the whole thing in.
I’ve also thrown in leftover pineapple instead of oranges, if I have it in the fridge.
